This is the Taft version of French fries, folks, and my kids LOVE them. The key is to dice them into quarters and cook at a high temperature so they get nice and crispy.
Preheat oven to 425. (I use convection roast – quicker and hotter in my opinion). Rinse and then halve or quarter potatoes. Toss in a bowl with a generous drizzle of oil, salt and pepper, onion powder and garlic powder. Spread onto a cookie tray and roast for about 20-25minutes, stirring at the halfway point. Dig in! (Adjust seasonings as needed. I am fairly liberal with the salt)
