Amy’s Breakfast Hash

If I had a signature side dish, this is it! I’ve served it for various occasions and crowds and it has always been a winner. You can use any assortment of veggies that appeal to you, but this is my favorite combo. Make a huge batch and eat it for a few days (if it lasts that long). Breakfast, lunch, dinner. If it looks beautiful but tastes just “eh,” you need more seasoning. So good with eggs and bacon/sausage, too!

Amy’s Breakfast Hash

  • 1 butternut squash, peeled and cubed OR 2 sweet potatoes peeled and cubed (or combo of both)
  • 1-2 zucchini, cubed
  • 1-2 yellow squash, cubed
  • 1 apple, cubed
  • 1 red bell pepper, seeded and large diced
  • 1/2 red onion, large chopped
  • Oil
  • Salt and pepper
  • Onion powder
  • Garlic powder
  • 3 big handfuls of spinach or other greens

Toss everything but spinach in a large bowl. Then spread into a single layer on large cookie sheet. Roast at 425 for about 25-30 minutes, stirring at the halfway mark. With about 2-3 minutes remaining, add the spinach (maybe a little more salt) and allow to wilt in the oven. Toss and serve.
